Eggplant Hummus with Organic Sunflower Seed Butter!
I was going to make some Eggplant Hummus dip but didn’t have Tahini at home. Instead, I used Sunflower seed butter and guess what? The taste was even better!
It took me only 20 minutes to make this and everyone absolutely loved it!
Here is how make:
1- Peel few eggplants and put them in a pot with half a cup water, 3 cloves of garlic and let it cook at medium temperature for about 10-15 minutes until the eggplants are soften.
2- Mix 1-2 tablespoon of Sunflower/Tahini, 1 clove of mashed garlic, some Himalayan salt and a touch of Cayenne pepper with the cooked eggplants until you get a nice and creamy mixture.
3- Add one tablespoon of a real Olive oil and feta cheese on top of the dish and Voila!! 😉
